2Coat beef slices in light soy sauce, dark soy sauce, cornstarch, bicarb soda, sugar, and high-fry oil. Set aside for 10 minutes (or ideally 30 minutes).
3Cut all other ingredients to size (spring onions, garlic, broccoli, beansprouts).
4Fry the beef in a wok or large frying pan on high heat with a bit of high-fry oil until crispy.
5Set the beef aside.
6Add beansprouts, spring onions, garlic, and broccoli to the pan and cook for 2 minutes.
7Add the rice noodles.
8In a bowl, mix together dark soy sauce, light soy sauce, oyster sauce, sesame oil, sugar, and lemon juice. Pour the sauce over the noodles and stir-fry until the noodles are golden brown.
