Cube the chicken breast into bite-sized pieces.

Add chicken to a bowl.

Add some sugar to the chicken.

Add sesame oil to the chicken.

Add white pepper to the chicken.

Add minced garlic to the chicken.

Add about a teaspoon and a half of baking soda to the chicken.

Mix the chicken and seasoning together.

Set the seasoned chicken aside.

For the wet batter, add 1 cup of flour to a bowl.

Add about half a cup of cornstarch to the flour.

Add some white pepper to the dry ingredients.

Sprinkle in a bit of sugar (optional).

Add a sprinkle of salt.

Add a teaspoon or so of baking soda.

Add about a cup of water and whisk until it resembles pancake batter consistency.

Coat the chicken pieces in cornstarch.

Heat oil in a frying pan.

Grab a piece of chicken, dip it into the wet batter, and place it into the hot oil.

Repeat the frying process in batches until all chicken is cooked and golden brown.

For the sweet and sour sauce, add ketchup to a small bowl.

Add brown sugar to the ketchup.

Add lemon juice (or vinegar) to the mixture.

Optionally, add a splash of red dye to the sauce for color.
