Place cod fish on a wire rack, salt it on all sides and let it sit for 10 to 15 minutes.
In a bowl, add one cup of flour, two teaspoons of baking powder, one teaspoon of salt, and half a cup of rice flour.
Whisk it all together until combined.
Add one can of ice cold beer slowly, whisking until it just comes together.
Take a paper towel and dab it over the fish.
Place codfish into a bowl of flour, give it a nice coating and shake off any excess flour.
Bring the fish over to the batter and drop it in. Give it a nice coating, rolling it around in there and shake off any excess batter.
Slowly place the fish into the hot oil and cook for about seven minutes, using a spoon or fork to move it around and make sure you get a nice even golden brown all around.
