Directions

  1. 1Dice up an onion and a bell pepper.
  2. 2Add the diced onion and bell pepper to a Dutch oven with plenty of olive oil, garlic, and spices.
  3. 3Add diced tomatoes, tomato sauce, tomato paste, and chicken stock to the Dutch oven and mix it all together.
  4. 4Place the Dutch oven on the grill.
  5. 5For the meat, use an 80/20 mix of ground chuck and three hot Italian sausages.
  6. 6Take the Italian sausages out of their casing.
  7. 7Season the meat mixture with the same spices as the chili.
  8. 8Mix all the meat together and form a large flat patty.
  9. 9Place the meat patty on a wire rack on top of the Dutch oven.
  10. 10Smoke the meat for a few hours.
  11. 11Once the meat is smoked, remove it and crumble it up, leaving it pretty coarse for better texture.
  12. 12Add the crumbled meat back into the chili mix.
  13. 13Add beans to the chili mix.
  14. 14Continue cooking everything together until ready.
