Season chicken with avocado oil, Ms. Tab's "Very Good" seasoning, roasted garlic powder, onion powder, a smidgen of Tony's, Badia complete seasoning, and half a packet of Sazon.
Mix the seasonings into the chicken thoroughly, getting it up under the skin.
Move the seasoned chicken to the side to marinate.
Wet the Scrub Daddy and use it to scrub the carrots clean.
Cut the ends off the carrots.
Slice the carrots into 1/4 inch rounds.
Sear the chicken skin-side down in a pan.
Flip the chicken after it's seared and cook for one more minute.
Reduce the heat and remove the chicken, setting it aside.
Add butter to the pan and sauté the chopped onions and carrots.
Grate two cloves of garlic into the vegetables.
Add some seasoning and a pinch of salt to the vegetables.
Once the onions are soft, add 2 cups of Basmati rice.
Season the rice again with Italian seasoning and a bit of Sazon.
Mix the rice until it's nice and toasted.
Pour in 3 to 3.5 cups of chicken broth.
Bring to a boil, then add the chicken back into the pan.
Reduce heat to low, cover, and cook for 20-25 minutes.
In a separate pan, melt butter.
Grate some garlic into the butter.
Add heavy cream and garlic butter and herb seasoning.
Grate some Parmesan cheese into the sauce.
Mix well and add a little more chicken broth if needed.
Taste the sauce for seasoning.
Add a little more Parmesan cheese.
Turn off the heat and add fresh parsley to the sauce.
Pour the cream sauce over the cooked chicken and rice.
