Filipino Chicken Adobo

Directions

  1. 1Marinate the chicken with soy, vinegar, peppercorns, bay leaves and sugar
  2. 2Lightly brown the chicken on each side, but don't cook it all the way through
  3. 3Saute the onion and garlic
  4. 4Pour in the marinade
  5. 5Simmer for five minutes just to give it a head start
  6. 6Put the chicken back in to finish cooking.
  7. 7After 20 minutes the sauce will reduce down to a sticky glaze that coats the chicken

Ingredients

  • 750 g chicken thigh fillets boneless and skinless
  • 6 garlic cloves minced
  • 0.33 cup soy sauce all purpose or light
  • 0.33 cup white vinegar
  • 2 tbsp white vinegar
  • 4 bay leaves fresh or dried
  • 2 tbsp oil
  • 1 small brown onion diced
  • 1.5 cups water
  • 2 tbsp brown sugar
  • 1 tbsp whole black pepper
  • 2 green onions sliced
  • cucumber

Tips

  • Marinate the chicken overnight if you can, but even 20 minutes is fine.
  • Lightly brown the chicken on each side, but don't cook it all the way through.
  • If the sauce hasn’t reduced by 25 min, take the chicken out then return pan to stove – will reduce super fast without chicken.
