1Heat ghee in a kadhai and add bay leaf, cinnamon stick, and black cardamom. Let them pop for 30 seconds on high heat.
2Add mutton and fry on high heat for 10 minutes.
3Heat oil in a pan and add pumpkin seeds, stone flower, cumin seeds, coriander seeds, black peppercorns, caraway seeds, cloves, mace, garlic cloves, ginger, tomatoes, dry red chillies, and Kashmiri red chillies.
4Fry on high heat for 2 minutes, then on low heat for 2.5 minutes.
5Add curry leaves and fry on high heat for 30 seconds. Blend into a smooth paste, adding a bit of water.
6Add the paste to the kadhai and fry with the mutton on high heat for 5 minutes, then on medium heat for 5 minutes.
7Add crispy fried brown onions, salt, and fry on medium heat for 8 minutes.
8Add hot water, mix well, close the lid, and turn the flame to low for about an hour, checking and stirring in between.
9Add garam masala powder and roasted crushed kasoori methi, mix well, and garnish with chopped coriander leaves.
