Homemade Mozzarella Cheese

Directions

  1. 1Add half a gallon of whole milk to a large pot.
  2. 2Heat the milk to 115°F over medium heat, stirring occasionally.
  3. 3Add one-third cup (or about 7 tablespoons) of white vinegar to the milk.
  4. 4Mix for about a minute until curds start to form.
  5. 5Cover the pot and let it sit for 15 minutes.
  6. 6Strain the curds from the whey using a cheesecloth and a ladle.
  7. 7Squeeze as much whey from the curds as possible.
  8. 8Place the curds in a microwave-safe bowl and heat for 30 seconds.
  9. 9Remove any extra whey from the bowl.
  10. 10Carefully fold and stretch the warm cheese into a ball.
  11. 11Place the mozzarella ball in a bowl.
  12. 12Add cold water and a pinch of salt to create a brine.
  13. 13Let the mozzarella sit in the brine for 10-15 minutes.
  14. 14Remove and slice the mozzarella cheese to serve.
