Cheese and Garlic Focaccia

Directions

  1. 1Combine and mix 2 cups of warm water, 2 tablespoons of active yeast, and 2 tablespoons of white sugar in a bowl. Cover for about 10 minutes to let the yeast activate.
  2. 2Add 4 cups of bread flour (or high-grade flour) and 2 tablespoons of salt to the mixture and mix until combined.
  3. 3Drizzle a little olive oil on top of the dough to prevent sticking, then cover it with glad wrap and let it rise for about 30-60 minutes.
  4. 4Wet your hands, stretch, and fold the dough on top of itself as shown in the video.
  5. 5Cover the dough again and let it rise for another 30-60 minutes.
  6. 6In a pot, add 50 grams of butter, 15 cloves of minced garlic, and some chopped parsley. Cook on low heat until the butter is melted and combined. Add another 25 grams of butter if needed to make it more liquidy.
  7. 7Line a baking tray with baking paper and drizzle some olive oil. Place the dough in the tray and stretch it to cover the entire bottom.
  8. 8Evenly spread about 90% of the garlic butter mixture on the dough.
  9. 9Sprinkle vegan mozzarella (or your preferred cheese) over the garlic butter mixture.
  10. 10Fold the dough on top of itself so all the cheese is in the middle, then flip it over.
  11. 11Cover the dough and let it rise and fill out the pan for about 30-40 minutes.
  12. 12Drizzle some oil on top of the dough and on your fingers to prevent sticking, then dimple the dough with your fingers.
  13. 13Pop the focaccia in the oven at 200 degrees Celsius (392 Fahrenheit) for 20 minutes.
  14. 14Take the focaccia out, sprinkle some more cheese on top, and put it back in the oven for another 10 minutes.
  15. 15Once out of the oven, drizzle the remaining garlic butter mixture on top and spread it around (a kitchen brush can be used if available).
