1Sauté the diced onion in the beef tallow for 3 to 4 minutes, then set aside and wipe the pan clean.
2Cook the ground beef as two smashburger patties, season with salt, top with 4 slices of American cheese, then set aside.
3Add the onions back into the pan along with beef stock to deglaze, then return the burgers to the pan with the bacon jam and pickles and roughly chop.
4Add W sauce, yellow mustard, additional bacon jam, and the remaining 2 slices of cheese, then chop again.
5Place the hoagie roll on top of the mixture to steam.
6Wrap the sandwich to allow it to steam before serving, optionally adding burger sauce.
