Soak chickpeas overnight with baking soda.

Boil the chickpeas until 90% cooked.

Chop the onions.

Smash ginger and garlic.

Blend boiled chickpeas and a boiled potato.

Add cinnamon sticks, star anise, cloves, slim cardamom, and fat cardamom.

Add crushed ginger and garlic.

Add deggi mirch, turmeric, cumin powder, and dry coriander.
