Preheat the oven to 250°C.

Add the matcha powder and sugar to a bowl and mix well.

Add the soft cheese and mix until smooth.

Add the eggs one at a time, mixing well after each addition.

Add the plain flour and cream in order, mixing each time.

Bake at 230°C for 20 minutes, then at 210°C for another 10 minutes.

Cool down and refrigerate overnight.
Ingredients
8 g matcha powder
60 g sugar
250 g soft cheese, softened
2 whole egg
1 tbsp plain flour
250 ml double cream

Tips
If using cream cheese, take it out of the fridge beforehand to soften.
You can sift the flour and cream through a tea strainer, but it is fine to add them directly.
If it's not caramelised enough, bake a little longer to get a deeper colour and more flavour.
8g of matcha gives a mild flavour; for a stronger taste, you can increase it up to around 20g.
This recipe is lightly sweetened; add more sugar to taste if you prefer it sweeter.
