1Add peeled garlic and salt into a food processor and pulse until a paste is formed, scraping down the sides as needed.
2Place a styrofoam cup with a small hole poked in the bottom on top of the food processor lid to act as a funnel.
3Slowly pour canola oil through the hole in the styrofoam cup while the food processor is running to emulsify the mixture, alternating with additions of lemon juice.
4Add a small amount of citric acid if desired for more tanginess, otherwise add more lemon juice.

Tips
Use the freshest garlic you can find.
Use canola or vegetable oil; olive oil will not work for this emulsion.
Add citric acid for more tanginess, or use more lemon juice as a substitute.
Turn off the food processor when adding lemon juice to prevent overheating.
