Steak Nacho Power Burrito

Directions

  1. 1Cube the potatoes.
  2. 2Boil potato for 10 minutes until soft.
  3. 3Chop cilantro and jalapeños.
  4. 4In a bowl, combine the cubed potatoes with avocado oil spray and seasoning.
  5. 5Air fry at 400°F for 12 minutes until crispy.
  6. 6Season the steak.
  7. 7Sear in pan until golden and cooked through.
  8. 8Blend cheddar, cottage cheese, cream cheese, mac powder, and seasonings until smooth.
  9. 9Heat gently in pan until melted and creamy.
  10. 10Scramble egg whites lightly and set aside.
  11. 11Pan fry bacon slices till crisp. Chop into bits.
  12. 12In one giant bowl, mix the seared steak, crispy potatoes, scrambled eggs, bacon and warm cheese sauce.
  13. 13Warm tortillas, fill each with 1/5th of the mixture, roll tight, and grill seam-side down if desired.
  14. 14Cook the burrito.

  • 5 Mission Carb Balance Whole Wheat Tortillas
  • 12 oz sirloin steak
  • taco seasoning
  • 6 slices uncured center cut no sugar bacon
  • 400 g egg whites
  • 220 g medium russet potato
  • 120 g reduced fat cheddar
  • 120 g fat free cottage cheese
  • 2 tbsp light cream cheese
  • 1 packet Kraft Mac & Cheese powder
  • smoked paprika
  • garlic powder
  • splash water or milk
  • potatoes
  • cilantro
  • jalapeño
  • avocado oil spray

Tips

  • Use regular instead of sweet potatoes.
  • The nacho cheese is cottage cheese base, but if you make it the way shown, you won't even notice.
