Directions

  1. 1Cut off the top and bottom of the pineapple.
  2. 2Use a pineapple corer to remove the core and peel the pineapple.
  3. 3Chop the pineapple into cubes.
  4. 4Add 1 cup of apple cider vinegar to a saucepan.
  5. 5Add 2 cups of sugar to the saucepan.
  6. 6Add 1 teaspoon of mustard seed to the saucepan.
  7. 7Add 1/2 teaspoon of turmeric to the saucepan.
  8. 8Add a heavy teaspoon of minced garlic to the saucepan.
  9. 9Add 1 tablespoon of ginger paste to the saucepan.
  10. 10Cook down the mixture until the sugar melts.
  11. 11Squeeze fresh lemon juice into the mixture.
  12. 12Add the chopped pineapples to the saucepan once the sugar is dissolved.
  13. 13Slice 6 jalapeños.
  14. 14Add the sliced jalapeños to the saucepan.
  15. 15Stir the mixture and cook for about 20 minutes until it becomes a syrup consistency.
  16. 16Ladle the pineapple jalapeño cowboy candy into jars.
  17. 17Clean the rim of the jar to ensure a good seal.
  18. 18Seal the jar with a lid.
  19. 19Perform a 10-minute hot water bath to ensure the seal is complete.
  20. 20Allow the candy to sit in the fridge overnight.
