Roughly chop a whole head of garlic.

Thinly slice a large shallot.

In a separate bowl, combine 2/3 cup gochugaru, 2/3 cup chili flakes, shiitake mushroom powder, optional MSG, sugar, and grated ginger.

In a small pot, add neutral oil, garlic, and shallots.

Slowly bring the heat up to 350 degrees Fahrenheit.

Once the garlic and shallot are golden, carefully strain them from the oil.

Bring the strained oil back up to temperature.

Carefully pour the hot oil over the spices.

Add a little soy sauce and a little bit of rice vinegar.

Add sesame seeds.

Once the mixture has cooled, add in the fried garlic and shallots.

Tips
Do not heat oil and then add garlic and shallots; instead, slowly bring the heat up to 350 degrees Fahrenheit.
Once garlic and shallot are golden, carefully strain them.
Bring the oil back up to temperature before pouring over spices.
Add fried garlic and shallots once the oil has cooled.
