1Pat the steak dry with a paper towel and season both sides generously with salt and pepper.
2Heat a medium stainless steel pan over medium-high heat until water droplets dance on the surface of the pan (and no longer bubble). Once heated, add the oil to evenly coat the surface of the pan and allow it to come to temperature.
3Once shimmering, add steaks and sear for approximately 4 min on each side. It should release easily with no sticking.
4Lower the heat and add butter, smashed garlic cloves, and rosemary sprigs. Carefully tilt your pan so that you can baste the steaks with the flavored butter.
5After removing from the heat, let rest for minimum 10 min before serving. Always slice against the grain for the most tender bite.
6In the same pan over medium heat, add shallots & mushrooms. Cook for 1-2 min.
7Add butter, red wine and beef stock. Stir to combine and let simmer for 10 min.
8Then, add corn starch slurry, salt & lots of pepper and stir until thickened.
9Serve overtop steak and enjoy!
