1Make a marinade for the steak by mixing together chipotle pepper puree, oil, red wine vinegar, lime juice, salt, pepper, ground cumin, onion powder, and garlic paste.
2Add the steak to the marinade and let it marinate for about 15 to 20 minutes.
3Place bell peppers on a baking sheet, drizzle with oil, season with salt and pepper, then roast in the oven.
4Prepare the chipotle sour cream sauce by mixing chipotle pepper puree, sour cream, garlic paste, seasoning from the marinade, fresh cilantro, lime juice, and a splash of water.
5Add the marinated steak to a hot cast iron skillet and cook for a couple of minutes until seared to desired doneness, then set aside.
6Add tortillas to a pan, then add cheese.
7Top with cooked steak and roasted bell peppers.
8Add a little more cheese, then fold the tortillas.
