1Shred 8 oz each sharp cheddar and pepper jack cheese.
2In a large bowl mix together the meat from a rotisserie chicken, a packet of taco seasoning, 1/2 cup of red enchilada sauce, a can of diced chilies, 1/4 cup of sour cream and 1 cup of cheese.
3Fry 16 taco-sized flour tortillas until golden brown and crispy.
4Drain on some paper towels.
5Spread some refried beans on one tortilla.
6Top with the chicken mixture and a little cheese.
7Place another tortilla on top and spread 3 spoonfuls of enchilada sauce on top.
8Top with more cheese.
9Bake at 400 for about 10 minutes or until the cheese is melted.
