Triple Cream Irish Potatoes

Directions

  1. 1Start with six Russet potatoes about this size.
  2. 2Peel and cube the potatoes and add them to an 8-quart pot.
  3. 3Add enough water to cover the potatoes by at least 3 inches.
  4. 4Add a couple of tablespoons of salt.
  5. 5Bring the potatoes to a boil and let them cook until they are fork-tender.
  6. 6By fork-tender, I mean you can pick it up with a fork, but with pressure, it falls apart.
  7. 7Completely drain all the water off the potatoes.
  8. 8Add them back into the pot.
  9. 9Put the pot back on low heat to dry some of the moisture out of the potatoes.
  10. 10While the potatoes are drying out, add one stick of butter into a pan.
  11. 11Add an 8-ounce block of cream cheese.
  12. 12Add 8 ounces of sour cream.
  13. 13Add a teaspoon of garlic powder.
  14. 14Add the flavor time Southern seasoning.
  15. 15Add salt.
  16. 16Add black pepper.
  17. 17Add 8 ounces of heavy cream.
  18. 18On a medium-low heat, keep this stirred until everything is incorporated.
  19. 19Add all your potatoes in here with your sauce.
  20. 20Go in here with your electric mixer until they're completely smooth.
  21. 21When you get done, this is what they should look like.
