Directions

  1. 1Mix corn flour, rice flour, a pinch of salt, and a pinch of chicken powder.
  2. 2Coat the washed and halved green beans with egg white, then toss them in the flour mixture until evenly coated.
  3. 3Heat a wok with oil.
  4. 4Add the coated green beans to the hot oil and fry, avoiding excessive stirring initially.
  5. 5Once the green beans have formed their shape, increase the heat and fry until slightly crispy.
  6. 6Strain the crispy green beans and set aside.
  7. 7In the same wok, add margarine or butter and salted egg yolks over medium heat.
  8. 8Mash the salted egg yolks until they are frothy.
  9. 9Turn off the heat.
  10. 10Add sugar, chicken powder, MSG, a pinch of salt, chili padi, and curry leaves to the wok.
  11. 11Add the fried green beans to the sauce and toss to coat.
  12. 12Strain the dish.

  • 1 chili padi
  • 1 curry leaves

Tips

  • Do not stir too much when the green beans are first added to the oil to allow them to form their shape.
