Sauté the homemade flavorful curry paste in a little bit of oil.

Add in vegetables of choice with salt, pepper, and spices.

Mix well, add in water, and boil for a few minutes.

In some coconut milk, mix in besan, removing any lumps.

On a low flame, add the coconut milk and besan mixture to the curry.

Mix and cook for a few minutes with some sugar until the kitchen smells amazing and the mixture thickens.

Prepare your condiments.

Just before serving, place cooked noodles in a bowl.

Add in your piping hot curry.

Garnish with roasted peanuts, fried onions, fried garlic, some spring onion greens, and chili oil.
