Thukpa

Directions

  1. 1Blend garlic, onions, tomatoes, bird's eye chilies, ginger, coriander stems, oil, and salt to create the spicy base for thukpa.
  2. 2Cook the blended mixture in a hot wok until it becomes thick and fragrant.
  3. 3Add carrots, cabbage, and mushrooms to the wok.
  4. 4Add water and cook them with a flash of heat to keep them bright, crunchy, and full of life.
  5. 5Season the soup with soy sauce, spring onions, and coriander.
  6. 6Pile boiled noodles into a bowl.
  7. 7Pour the steaming broth over the noodles.
  8. 8Finish with a spoonful of momo chutney, spring onions and a lime wedge.
