High Protein Cajun Honey Butter Chicken & Creamy Potatoes

Directions

  1. 1Slice your chicken breast into cubes.
  2. 2Add Cajun seasoning mix and olive oil to the chicken.
  3. 3Slice your uncooked potatoes into small cubes.
  4. 4Season potatoes with garlic powder, Italian herbs, paprika, and olive oil.
  5. 5Mix the seasoned potatoes well.
  6. 6Oven bake or air fry the potatoes for 20-22 minutes at 200C/400F until golden and crispy.
  7. 7Cook the chicken in light butter on medium heat for 6 to 8 minutes until golden brown.
  8. 8Lower the heat.
  9. 9Add more butter, extra seasoning (garlic, onion powder, paprika, oregano), a drizzle of honey and parsley to the chicken.
  10. 10Mix till fully coated and delicious.
  11. 11Set the chicken aside.
  12. 12Add chopped onions to the pan.
  13. 13Cook onions till soft for 3-4 minutes.
  14. 14Add tomato paste and mix for 2 minutes.
  15. 15Lower the heat.
  16. 16Add evaporated milk and garlic and herb cream cheese.
  17. 17Stir on low heat continuously till completely smooth.
  18. 18Drop your crispy potatoes into the creamy mixture.
  19. 19Mix and fold gently till deliciously creamy.

  • 30 g Light Butter (for cooking)
  • Extra Seasoning: garlic, Onion Powder, Paprika, Oregano
  • 30 g Honey (for all the chicken)
  • Fresh Parsley
  • 1100 g Raw Potatoes, cubed
  • 1 Tbsp Garlic Powder
  • 1 Tbsp Italian Herbs
  • 1 Tbsp Paprika
  • 2 Tsp Olive Oil
  • 100 g Red Onion, finely chopped
  • 50 g Tomato Paste
  • 250 g Light/Fat Free Olive Evaporated Milk
  • 150 g Garlic & Herb Cream Cheese
