Baked Black Bean Taco

Directions

  1. 1Fry the roughly chopped onion and garlic until starting to brown.
  2. 2Add the spices (paprika, oregano/basil, cumin) and tomato paste, then toast for a few more minutes.
  3. 3Add the grated carrot and black beans, then fry quickly.
  4. 4Add the stock and simmer until reduced.
  5. 5Mash the mixture into a chunky consistency.
  6. 6Place a few tablespoons of the bean mixture in a corn tortilla.
  7. 7Fold the tortilla over, spray with oil, and bake or air fry until crispy.
  8. 8Blend the soaked cashews, nutritional yeast, garlic powder, onion powder, salt, and pepper for the cashew cheese sauce.
  9. 9Serve the baked tacos garnished with fresh coriander and the cashew cheese sauce.

  • 1 large white onion
  • 4 garlic clove
  • 1 tsp paprika
  • 1 tsp oregano/basil
  • 0.5 tsp cumin
  • 1 tbsp tomato paste
  • 1 large carrot
  • 1 jar black beans
  • 1 cup stock
  • to taste salt
  • to taste pepper
  • corn tortillas
  • 1 handful soaked cashews
  • few tbsp nutritional yeast
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • fresh coriander

Tips

  • Beans are full of fibre and protein, and are cheap.
  • Meat has protein but no fibre; beans offer both protein and fibre without cholesterol, reducing risks of cancers, heart and bowel diseases.
