1In a bowl, add diced potatoes, followed by olive oil, salt, Italian herbs seasoning, onion powder, garlic powder, chilli powder, and smoked paprika.
2Mix the potatoes and seasonings together.
3Air fry at 200C/400F for 20-25 minutes, flipping halfway, or oven bake at 200C/400F for 30-35 minutes, flipping halfway.
4While potatoes are baking, cook up diced onions in a pan.
5Once onions have some color, add extra lean beef mince.
6Add Worcestershire sauce and the same seasonings used for the potatoes to the mince.
7Once the mince is nearly cooked, add tomato paste and diced garlic.
8Mix and let the mince fully cook through.
9In a bowl, add eggs and blended cottage cheese for extra protein.
10Mix the egg mixture together.
11Cook the egg mixture on low-medium heat, mixing gently every minute or so, until perfectly fluffy.
12Season the cooked eggs with salt and pepper.
13Grab a warmed tortilla.
14Evenly distribute the eggs, mince, and potatoes on the tortilla.
15Top it off with Sriracha mayonnaise and chives.
16Roll the burrito.
17Toast the rolled burrito.
18Repeat the process for the other nine burritos.
19Wrap the burritos in foil to store in the freezer.

Tips
To avoid the tortillas from breaking when you roll them, simply heat them on a pan on low heat for 30 seconds on each side.
To reheat frozen burritos, take the burrito out of the wrapper or foil, wrap it in a slightly damp paper towel, and microwave for around 2 minutes to thaw. Then air fry at 190C or 375F for approximately 5-8 minutes. This last step can also be done in an oven or pan.
