Directions
- 1Add a drizzle of olive oil to a large pan over high heat. Add thinly sliced red onion and peppers. Fry until softened and lightly charred.
- 2In a large bowl, toss shredded chicken with fajita seasoning. Stir in peppers, onion and salsa.
- 3Stack tortillas and halve them with a sharp knife. Fold each half into a cone, securing with a toothpick.
- 4Fill each cone with cheese, then spoon in chicken. Cover with more cheese and press down.
- 5Air fry or bake the quesadilla cones until crispy and heated through. Remove toothpicks.
- 6Serve with sour cream and coriander.
