Fish Chowder

Directions

  1. 1Add 2 tbsp butter to a pot on low heat.
  2. 2Add 1 onion (roughly or finely chopped) and season with salt.
  3. 3Smash and roughly chop some garlic, then add it to the onions.
  4. 4Dice 2 carrots into even cubes and add to the pot.
  5. 5Add a pinch of white pepper.
  6. 6Keep on low heat while peeling and dicing 3-4 potatoes into even-ish cubes, then add to the pot.
  7. 7Season with salt and cook for 23 minutes until onions are soft and translucent.
  8. 8Add 1 tbsp flour and cook on medium heat for 2 minutes to cook out the flour.
  9. 9Turn the heat up high and deglaze with 12 tbsp white wine, scraping the bottom of the pot to lift all the flavour.
  10. 10Reduce the wine slightly.
  11. 11Reduce heat to mediumlow and add enough milk to cover the veg.
  12. 12Add a splash of cream (optional).
  13. 13Simmer gently until carrots and potatoes are tender.
  14. 14Add 1 chicken stock cube.
  15. 15Taste and adjust seasoning if needed.
  16. 16Add 2 tsp of dried or fresh tarragon.
  17. 17Remove about c of the potatoes + carrots and add to a blender with enough of the hot liquid to blend smoothly.
  18. 18Blitz until completely smooth and pour back into the pot, stirring through.
  19. 19Season your (1-1.5lbs) mixed fish with salt.
  20. 20Add fish to the chowder and simmer on mediumlow heat for around 10 minutes until fish is tender and cooked through.
  21. 21Taste again and if it tastes a bit dull, add a squeeze of lemon juice to brighten it up.
  22. 22Serve with homemade bread.

  • 3 to 4 potatoes peeled and diced into even-ish cubes
  • 1 tbsp flour
  • 1 to 2 tbsp white wine
  • 1 dollop Dijon mustard
  • 1 squeeze lemon
  • milk
  • 1 splash cream
  • 1 chicken stock cube
  • 2 tsp dried or fresh tarragon
  • 1 to 1.5lbs mixed fish

Tips

  • This is a gentle simmer job, don boil it hard or the milk can split
  • Blending a portion makes it thick and creamy without needing loads of cream
  • Cream is optional, milk is enough
  • Use whatever fish you have - this is a ",measure with your heart", dinner
  • If your chowder gets too thick, loosen with a splash of milk or water
