Sear the Meat: Season the rump roast with salt and pepper. Sear it for about 3-4 minutes on each side until it is nicely browned.
Prepare the Vegetables: Dice your onion, carrots, celery, and garlic.
Layer the Bottom: Place the chopped vegetables at the bottom of your crock pot.
Add the Meat and Liquid: Put the seared rump roast on top of the veggies in the crock pot. Mix the beef broth, thyme, rosemary, and if using, red wine. Pour this mixture over the roast and vegetables. Add mushrooms or any other optional ingredients you like. Toss in bay leaves if you have them.
Set Your Crock Pot: Cover the crock pot with a lid. Set it to low for 8-10 hours or high for 4-6 hours.
Let It Cook: Let your crock pot do its thing. The longer you cook it, the more tender the meat will become.
Finish It Up: When the cooking time is done, carefully remove the roast and let it rest for about 10-15 minutes. Then slice it against the grain for the best texture.
