Smoked Chuck Roast

Directions

  1. 1Coat your chuck roast in a little bit of oil and heavily with a steak rub. Pat the rub in really good and mop up any extra seasoning on the cutting board with the meat.
  2. 2Set your smoker at 225°F and smoke the chuck roast for about 3 hours to render the fat and give it a smoky flavor. Flip the chuck roast halfway through the smoking process.
  3. 3Transfer the chuck roast to a crock pot and add about 1-2 cups of bone broth or beef stock, just enough to submerge the meat about halfway.
  4. 4Cook on high for 4 to 5 hours until it's falling apart and super tender. Flip the chuck roast halfway through the slow cooking.

  • steak seasoning / rub of choice (Black & Tan by Fire & Smoke)
  • 1 cups bone broth or beef stock
  • oil to coat chuck roast

Tips

  • Do not shred the entire chuck roast; cut it in large chunks, then down the center of each chunk, and then shred with a fork to avoid long & stringy pieces.
  • Store with some of the liquid so it doesn dry out.
