3Add your spinach and blanch for 20 seconds as your greens shrink and turn bright green and beautiful.
4Transfer the blanched spinach into an ice bath to prevent overcooking.
5Strain the spinach and gently wring out the excess water with your hands.
6Season the spinach with sesame oil, soy sauce, minced garlic, green onions, gochugaru, sesame seeds, and salt to taste.
7Mix well.

This dish is traditionally made with regular spinach, not baby spinach. However, it's fine to use either. Baby spinach is much easier to find in the store.
