1Season the pork with Shaoxing wine, light soy, dark soy, white pepper, kosher salt, and five spice powder. Marinate for 15 minutes until the liquids are incorporated.
2Mix chili oil, light soy, sesame paste, ground sichuan peppercorn, five spice powder, sugar, MSG, and fresh garlic to form the base of the sauce.
3Fry the pork over high heat until the fat is rendered and it's crispy.
4Cook the noodles until al dente and transfer immediately to the sauce along with some starchy water to loosen it up.
5Add the crispy pork topping, scallions and crushed peanuts.
