1Make the chicken brine by combining 2 cups of water, 1 tbsp kosher salt, 1 tbsp sugar, 1 tbsp black pepper, ½ tsp Chinese 5 spice, ½ tsp ginger powder, ½ tsp white pepper, ½ tsp onion powder, and 2 bay leaves.
2Add 2 lbs of tenderloins to the brine and refrigerate for at least an hour.
3Prepare the wet batter by whisking together ⅓ cup of flour, 4 oz of water, and 1 egg. Make this an hour ahead of time.
4Mix 2 cups of all-purpose flour, 2 tbsp chicken seasoning, 1 tsp Chinese 5 spice, 1 tsp paprika, 1 tsp black pepper, 1 tsp onion powder, ½ tsp ginger powder, 1 ½ tsp mustard powder, and ½ tsp white pepper to create the seasoned flour.
5Drain and dry the marinated tenderloins.
6Dredge each tenderloin in the plain flour, then the wet batter, and finally coat with the seasoned flour, pressing firmly.
7Deep fry the chicken at 300°F (149°C) for 5 minutes, then at 350°F (177°C) for 1-2 minutes.
8Make the honey garlic sauce by melting 100g of unsalted butter in a pan, then adding 40g minced garlic and cooking for 3-4 minutes.
9Add 1 tsp paprika, ⅓ cup honey, 1 tbsp soy sauce, 1 tbsp chili flakes, and ½ tsp kosher salt to the pan and stir.
10Coat the fried chicken with the honey garlic sauce.
