6Add one large egg and 3/4 cups of water to the batter mixture and mix well.
7Add an additional quarter cup of water to achieve the desired batter consistency.
8Add the velveted chicken to the batter and mix to coat.
9Deep fry the chicken at 375 degrees, holding each piece for a second after dropping to prevent sticking.
10Remove the chicken after a couple of minutes and then double fry to make the outside crispier.
11In a pan, combine half a cup of sugar and four teaspoons of cornstarch for the sweet and sour sauce, mixing well to avoid lumps.
12Add 3/4 cups of water, a quarter teaspoon of salt, one teaspoon of less sodium soy sauce, and six teaspoons of white vinegar to the sauce mixture and mix quickly.
13Add a few drops of red food coloring to the sauce for color, if desired.
14Bring the sauce to a boil, continuously whisking, then stop the stove once boiling.
15Plate the fried chicken and serve with white rice or fried rice.
16Pour the sweet and sour sauce on top of the chicken or serve it on the side.
17Optionally, fry your favorite vegetables like onions and bell peppers when frying the chicken.
