Chop the chicken thighs into bite-sized pieces.

In a bowl, combine the chopped chicken thighs, salt, sugar, white pepper, chicken powder, rice wine, sesame oil, oyster sauce, and soy sauce. Mix well.

Let the chicken marinate for about 10 minutes.

Add the egg to the marinated chicken and mix well.

Gradually add cornstarch and mix until the chicken is evenly coated.

Heat sunflower oil in a pan. Check the temperature by dropping in two chopsticks; if they bubble, the oil is ready.

Carefully add the marinated chicken to the hot oil and deep fry for about 5 minutes until golden and crispy.

Remove the chicken from the oil and drain.

In a pan, add oil and stir-fry chilies, onion, ginger, and garlic until fragrant.

Add water, white vinegar, sugar, salt, and tomato sauce to the pan, and bring to a boil.
