1Cut bacon into pieces and cook on a cast iron skillet until crisp.
2Use a food processor to get the bacon into small, fine pieces.
3Season chicken with cowboy butter seasoning.
4Cook chicken in about 2 Tbsp of the leftover bacon grease.
5Remove cooked chicken and allow to rest.
6Make the cowboy butter by combining 12 Tbsp melted butter, 4-5 minced garlic cloves, juice of 1 lemon, 1 tsp lemon zest, 2 Tbsp Dijon mustard, 1 tsp paprika, 1/4 cup fresh chopped parsley, 2 Tbsp chives, 2 tsp thyme, 2 tsp chili oil, and 2 tsp Cowboy butter seasoning.
7Make the ranch by pouring half of the cowboy butter mixture into a separate jar and adding 1/4 cup sour cream, 1/2 cup mayo, 2-4 Tbsp buttermilk, and 2 tsp fresh dill.
8Get out your waffle maker and preheat on high.
9Put down a layer of the prepared butter on the waffle maker.
10Place baked potatoes on the waffle maker, then smash them.
11Baste with butter every 5 minutes for 15 minutes.
12Apply Colby Jack cheese.
13Let the potatoes and cheese cook all together for 5 more minutes.
14Chop up chicken.
15Build the waffle with chicken, ranch, bacon, and chives.

Tips
