Broccoli Cheddar Soup

Directions

  1. 1Dice one whole yellow onion.
  2. 2Crush three cloves of garlic.
  3. 3Cut six strips of bacon into pieces.
  4. 4Roughly chop the broccoli florets if you prefer smaller bits.
  5. 5Create your Better Than Bouillon mixture if you're using that instead of chicken broth.
  6. 6Shred 4 ounces of sharp cheddar cheese and 4 ounces of sharp white cheddar cheese.
  7. 7Cook the bacon over medium heat until it's nice and crispy.
  8. 8Completely remove the bacon from the pot, leaving the grease behind.
  9. 9Add 3 tablespoons of butter and your diced onions to the pot.
  10. 10Cook over medium heat until the onions are softened.
  11. 11Add the crushed garlic and stir until fragrant.
  12. 12Sprinkle in the flour and mix until incorporated to create a roux.
  13. 13Add 4 cups of chicken broth and stir for a minute or two to allow it to thicken, scraping all the brown bits off the bottom for flavor.
