Broccoli Cheese Soup

Directions

  1. 1Wash and chop the broccoli into small pieces.
  2. 2Transfer the chopped broccoli to a large bowl.
  3. 3Drizzle olive oil over the broccoli in the bowl.
  4. 4Add salt, pepper, garlic powder, and oregano to the broccoli.
  5. 5Mix the broccoli with the seasonings.
  6. 6Spread the seasoned broccoli evenly on a baking sheet lined with parchment paper.
  7. 7Grate two large carrots.

  9. 9Chop two small shallots.
  10. 10Mince three garlic cloves.
  11. 11Dice four slices of bacon.
  12. 12Cook the diced bacon in a large pot over medium heat until crispy.
  13. 13Remove the crispy bacon from the pot and set aside, leaving some bacon fat in the pot.
