Directions

  1. 1Place chicken thighs and drumsticks in a large mixing bowl.
  2. 2Pour in three cups of buttermilk and half a cup of hot sauce.
  3. 3Add two teaspoons of salt and one teaspoon of black pepper.
  4. 4Toss with tongs to mix the hot sauce and buttermilk together.
  5. 5Cover the bowl with plastic wrap and place it in the fridge to soak for about 4 hours.
  6. 6To prepare the coating, pour 3 cups of all-purpose flour and half a cup of cornstarch into a plastic bag.
  7. 7Add one tablespoon of paprika, one tablespoon of salt, two teaspoons of onion powder, two teaspoons of garlic powder, one teaspoon of dried oregano, one teaspoon of dried basil, one teaspoon of white pepper, and one teaspoon of cayenne pepper.
  8. 8Seal the bag and shake to combine the ingredients.
  9. 9Pour enough vegetable or peanut oil into a large heavy skillet to cover the bottom with about an inch or three-quarters of an inch of oil.
  10. 10Heat the oil to 350 degrees Fahrenheit.
  11. 11Remove a piece of chicken from the buttermilk mixture, letting excess drip off.
  12. 12Place the chicken into the flour and cornstarch seasoning mixture.

  14. 14Shake off excess flour and place the chicken directly into the oil.
  15. 15Fry for approximately 14 minutes, or until cooked through to an internal temperature of 165 degrees Fahrenheit. It's a good idea to get it at about 172 to 175 for dark meat.
  16. 16Remove the chicken from the oil and transfer it to a paper towel-lined plate to drain and cool.
  17. 17Let it rest for about 10 minutes before serving.
