Directions

  1. 1Cut chicken into 1-inch cubes.
  2. 2Season the chicken with chili powder, salt, black pepper, and onion powder until nice and coated.
  3. 3Sprinkle 4 tablespoons of all-purpose flour over the seasoned chicken.
  4. 4Heat a little bit of oil in a pan over medium-high heat, enough to cover the bottom.
  5. 5Add the chicken in a single layer to the hot pan and brown it all around, working in batches if necessary.
  6. 6Reduce the heat to medium and add a little more oil.
  7. 7Add the bell pepper and onion and sauté for a couple of minutes.
  8. 8Add the minced garlic along with the Roma tomatoes and sauté for a minute.
  9. 9Sprinkle 1 tablespoon of all-purpose flour, mix it in with the vegetables, and allow it to cook for about a minute.
  10. 10Add the chili powder, ground cumin, oregano, and poultry herb mix and mix it.
  11. 11Slowly pour in the chicken broth, mixing as you add, and allow it to begin to thicken, making sure to dissolve the flour.
  12. 12Add the tomato paste and mix it in.
  13. 13Add the bay leaves and bring it to a simmer.
  14. 14Once it comes to a simmer, taste it for salt and adjust if needed.
  15. 15Add the chicken and mix it in.
  16. 16Reduce the heat to a low setting, cover it, and allow it to cook for 25 minutes or until the chicken is fully cooked and the sauce has turned into a gravy.

  • 4 Roma tomatoes
  • 3 minced garlic clove
  • 1 tbsp tomato paste
  • 1.5 tsp cumin
  • 1 tsp oregano
  • 1 tsp poultry blend
  • 2 cups chicken broth
  • 2 bay leaves
