Masa for Tamales

Directions

  1. 1Add 8 cups of Mi Tienda masa para tamales to a bowl.
  2. 2Add 3 tablespoons of salt.
  3. 3Add 1 tablespoon of baking powder.
  4. 4Add 2 cups of beef tallow or good quality pork fat.
  5. 5Add 2 cups of salsa roja.
  6. 6Add 8 cups of chicken stock.
  7. 7Lightly mix all ingredients until the flour rehydrates and absorbs the liquid.
  8. 8Mix the masa by hand until it no longer sticks to your glove.
  9. 9Steam corn husks for about 10 or 15 minutes before using them.
  10. 10Spread the masa on the smooth silky side of your corn husk in one swipe.
  11. 11Add your desired fillings to the tamales.
  12. 12Roll up the tamales neatly.
  13. 13Tie up the tamales if desired.
  14. 14Steam the tamales for an hour and a half under medium heat.
  15. 15Let the tamales rest for about 10 or 15 minutes before opening them so the masa can set.
