Add 8 cups of Mi Tienda masa para tamales to a bowl.

Add 3 tablespoons of salt.

Add 1 tablespoon of baking powder.

Add 2 cups of beef tallow or good quality pork fat.

Add 2 cups of salsa roja.

Add 8 cups of chicken stock.

Lightly mix all ingredients until the flour rehydrates and absorbs the liquid.

Mix the masa by hand until it no longer sticks to your glove.

Steam corn husks for about 10 or 15 minutes before using them.

Spread the masa on the smooth silky side of your corn husk in one swipe.

Add your desired fillings to the tamales.

Roll up the tamales neatly.

Tie up the tamales if desired.

Steam the tamales for an hour and a half under medium heat.

Let the tamales rest for about 10 or 15 minutes before opening them so the masa can set.

Tips
