Directions

  1. 1Remove all the silver skin and extra fat from the beef shin.
  2. 2Apply a layer of olive oil to the beef shin.
  3. 3Apply a good coat of beef rub to the beef shin.
  4. 4Put the beef shin in the smoker at 275 Fahrenheit for four hours.
  5. 5Check if you have a great bark. Take it out and wrap it in foil.
  6. 6Add red wine to the foil-wrapped beef shin.
  7. 7Put the foil-wrapped beef shin back into the smoker for seven hours until the internal temperature is 210 Fahrenheit.
  8. 8Place the beef shin on a bed of mashed potatoes.
  9. 9Pour the juices left on the bottom over the beef shin.
  10. 10Check if tender.
  11. 11Serve and enjoy!
