Place halved tomatoes, raw mango halves, a whole garlic bulb, and green chillies in a preheated air fryer.

Air fry at 180°C for 10-12 minutes, flipping halfway, until smoky.

Once roasted, peel the skins off tomatoes and mangoes.

Separate the roasted garlic cloves from the bulb.

Add roasted ingredients to a chopper or blender along with onion, coriander leaves, mint leaves, and all the spices.

Blend to a smooth chutney consistency, adding water only if needed.

Serve the smoky, tangy chutney with hot parathas, rotis, or rice.

2 medium tomatoes
1 small raw mango
1 small whole garlic bulb
2 green chillies
1 small onion
1 handful coriander leaves
1 few mint leaves
1 tsp red chilli powder
0.5 tsp chaat masala
0.5 tsp cumin (jeera) powder
0.5 tsp coriander powder
to taste salt
1 tsp water

Tips
Remove green chillies after 5-6 minutes to avoid over-browning.
Adjust spices to taste.
Add 1-2 tsp water only if needed to keep the chutney oil-free.
