Add the whole tomatoes with their juice, Rotel, onion, jalapeño, garlic, sugar, salt, cumin, lime juice, and cilantro to a blender or food processor.

Pulse until you reach your preferred texture, whether chunky or smooth.

Taste with a tortilla chip.

Adjust with more salt, lime juice, or cilantro until it tastes just right.

Transfer the salsa to a container and refrigerate so the flavors can come together beautifully.

Serve chilled with tortilla chips, tacos, burritos, or spoon it over your favorite Mexican dishes.

1 can (28 oz) whole tomatoes, with juice
2 cans (10 oz) Rotel, diced tomatoes with green chilies
0.25 cup chopped onion
1 clove minced garlic
1 whole jalapeño, quartered and thinly sliced
0.25 tsp sugar
0.25 tsp salt
0.25 tsp ground cumin
0.5 cup fresh cilantro, or more to taste
0.5 Juice of lime
