Directions
- 1Preheat oven to 375°F (190°C).
- 2Lightly grease a 9x13-inch baking dish.
- 3In a skillet, cook ground beef and onion over medium heat until browned.
- 4Add garlic and cook 1 more minute.
- 5Season with salt, pepper, and paprika (if using).
- 6Drain fat from the beef mixture.
- 7Place half the sliced potatoes in the baking dish.
- 8Top with half the beef mixture.
- 9Top with half the cheddar cheese.
- 10Repeat with remaining layers of potatoes, beef mixture, and cheddar cheese.
- 11In a bowl, whisk together sour cream, cream of soup, and milk.
- 12Pour the sauce evenly over the casserole.
- 13Cover with foil and bake for 45 minutes.
- 14Uncover and bake for an additional 15–20 minutes, until potatoes are tender and top is golden and bubbly.
- 15Optionally, sprinkle extra cheese or crispy fried onions in the last 5 minutes of baking.
- 16Let rest 5–10 minutes before serving.
- 17Garnish with chopped parsley if desired.
