1Start by adding a pound of ground beef to a hot oiled pan, breaking it up and browning it.
2Add one diced onion, one diced poblano pepper, and one diced jalapeno pepper to the pan.
3Stir in the vegetables and cook them for a few minutes until they are soft.
4Drain any excess grease from the beef and vegetable mixture.
5Transfer the entire mixture into your crock pot.
6Add two drained cans of Rotel original, three tablespoons of taco seasoning, two tablespoons of corn starch, and half a cup of beef broth to the crock pot.
7Stir all the ingredients until beautifully combined.
8Put the lid on the crock pot and cook on low for at least three or four hours to allow the flavors to meld.
9When the dip is ready, remove the lid and add two cups of cheese (one cup Monterey Jack and one cup cheddar).
10Stir in the cheese until melted.
11Serve the dip, adding more cheese on top and cilantro if desired.

Tips
