Tater Tot Taco Bake

Directions

  1. 1Start by throwing a pound of ground beef into a hot oiled pan.
  2. 2Break up and brown the ground beef.
  3. 3Add a diced onion and cook until it softens up.
  4. 4Add two or three minced garlic cloves and cook for about a minute.
  5. 5Drain any excess grease.
  6. 6Stir in a packet's worth of your favorite taco seasoning along with a half a cup of water.
  7. 7Once that's all stirred in, add 2/3 of a cup of enchilada sauce, a cup and a half of frozen corn, one diced red bell pepper, and a can of black beans, rinsed and drained.
  8. 8Stir all of this in and cook for about 5 minutes.
  9. 9Transfer the mixture into a 9x13 baking dish and spread it out evenly.
  10. 10Cover the mixture with shredded cheese.
  11. 11Add a layer of tater tots on top of the cheese.
  12. 12Bake in the oven at 400° for about 30 minutes.
  13. 13While baking, whip up a sauce by combining a third cup of salsa and a third cup of enchilada sauce.
  14. 14Whisk the sauce together.
  15. 15Drizzle the sauce on your tots when they come out of the oven.
  16. 16Cover with cheese one more time.
  17. 17Return to the oven for about 5 or 10 minutes to melt the cheese.
  18. 18Garnish with cilantro, cut a piece, and serve on a plate.
  19. 19Add some sour cream, hot sauce, lettuce, and tomatoes if desired.
