Directions

  1. 1Add chicken thighs or breasts to a baking dish and spread them evenly.
  2. 2Completely cover the chicken with taco seasoning.
  3. 3Pour the entire jar of salsa over the chicken and spread it evenly.
  4. 4Bake at 400 degrees for about 25 minutes.
  5. 5Add a small pile of Monterey Jack cheese on top of each piece of chicken.
  6. 6Bake for another 5 minutes until the cheese melts.
  7. 7Garnish with cilantro and serve with Spanish rice.

  • 8 pieces chicken thighs or breasts
  • 1 tablespoon taco seasoning
  • 1 jar salsa
  • 1 cup Monterey Jack cheese
  • 1 tablespoon cilantro
  • 1 plate Spanish rice
