Peel the potatoes.

Cube the potatoes.

Soak the cubed potatoes in cold water.

Pat the potatoes dry. This helps them crisp up beautifully.

Spray the potatoes with avocado oil and season with salt.

Air fry the potatoes until golden perfection.

Chop garlic for the sauce base.

Chop parsley for the sauce.

Slice a lemon for the sauce.

In a bowl, combine Lebanese yogurt, tahini, lemon juice, parsley, and garlic paste and mix well.

In a pan, add avocado oil, garlic paste, chili flakes, tomato paste, and lemon juice to deglaze.

Chop cilantro.

Toss in your crispy potatoes.

Finish with a final sprinkle of cilantro.

Plate the herby tahini yogurt.
