Loaded Potato Soup

Directions

  1. 1Cut yellow potatoes into small pieces.
  2. 2Cut a small onion.
  3. 3Add bacon to a large pot and cook until fully crispy.
  4. 4Remove the cooked bacon from the pot.
  5. 5Add the diced onion to the pot with the bacon drippings.
  6. 6Add butter, minced garlic, and flour to the pot with the onions.
  7. 7Once all ingredients are fully combined, add in 2 cups of chicken broth.
  8. 8Add 4 cups of milk to the pot.
  9. 9Add 1 cup of heavy cream to the pot.
  10. 10Add salt to taste.
  11. 11Add pepper to taste.
  12. 12Add chicken bouillon.
  13. 13Add cajun seasoning.
  14. 14Add the cut potatoes to the pot.
  15. 15Let the potatoes cook for about 15 to 20 minutes until they are tender.
  16. 16Mash a few of the cooked potatoes in the pot.
  17. 17Add Boursin cheese to the soup.
  18. 18Stir until the Boursin cheese is fully incorporated.
  19. 19Add the cooked bacon back into the soup.
  20. 20Add chives to the soup.
  21. 21Add about 1.5 cups of cheddar cheese to the soup.
