Cut yellow potatoes into small pieces.

Cut a small onion.

Add bacon to a large pot and cook until fully crispy.

Remove the cooked bacon from the pot.

Add the diced onion to the pot with the bacon drippings.

Add butter, minced garlic, and flour to the pot with the onions.

Once all ingredients are fully combined, add in 2 cups of chicken broth.

Add 4 cups of milk to the pot.

Add 1 cup of heavy cream to the pot.

Add salt to taste.

Add pepper to taste.

Add chicken bouillon.

Add cajun seasoning.

Add the cut potatoes to the pot.

Let the potatoes cook for about 15 to 20 minutes until they are tender.

Mash a few of the cooked potatoes in the pot.

Add Boursin cheese to the soup.

Stir until the Boursin cheese is fully incorporated.

Add the cooked bacon back into the soup.

Add chives to the soup.

Add about 1.5 cups of cheddar cheese to the soup.
